    How do you avoid powergaming in roleplay?: When someone uses knowledge that they in game should not know about. EX: If when I created my character and gave him knowledge about certain magical powers that he would realistically not know about.
    How does metagaming disrupt fair roleplay?: When someone tries to attempt an attack or action that becomes instant such as a kill, when it would have been a little bit of damage. EX: Willem Swings his sword at the demon lord killing him quickly and instantly.

Q: I don't understand how combat and that kind of thing works, it didn't make sense in words but if I watched then it would make more sense

A; Combat is either a combat-roleplay system which is called CRP or PVP default which uses the vanilla Minecraft 1.16 PVP. The person who is the defender (aka the person who was attacked) gets to choose which one this is.
