Actually, you are fully capable of evoking crystals. I even evoke rock candy just to piss off the whiney folk.

But evoked things only last for as long as the caster focuses on it, and even then the caster can't focus on it for too long. Therefore, evoking ores to smelt and make into actual swords and tools is practically impossible, unless you have a god-like amount of mana.
