In the exercise of the medical art of preserving the divine balance between body and soul, it is necessary to treat the effects of alcohol and the precious properties of wine with supreme consideration.

 

A sacred beverage by history and tradition, wine proves to be both remedy and poison, depending on the measure and wisdom of its user. Therefore, in my humble knowledge, I offer to the people, this treatise on the virtues, dangers and hallowed uses of this gift of the earth.

I. De la Nature de l’Alcool

 

1. The Breath of the Grapevine, born from the natural fermentation of the ripe fruit.

It possesses the power to warm the body internally, enlivening the blood and strengthening the soul against melancholy.

 

2. Used with discernment, alcohol proves to be a physician of the humours; it aids digestion, dissolves sadness and enlivens the spirit.

 

3. But abused without restraint, alcohol turns into a tyrant of the body and corrupter of the soul, engendering weakness, clouding and inflammation.

 II. Des Vertus Sacrées du Vin

 

1. Wine is the blood of the earth and the milk of humanity, the noble fruit of the vine fertilised by the natural elements.

 

2. Taken moderately, it is a sovereign remedy:

 - It warms the bowels and soothes pains.

   - It gladdens the heart and stimulates vivacity of wit.

   - It melts melancholy, restoring freedom to the soul.

 

3. Red wine, dense and carnal, invigorates the hearts of the melancholic.

 

4. White wine, light and sparkling, mitigates the moods of the choleric.

 

5. Spiced or herbised wine, prepared with various spices, becomes an elixir of health and longevity.

III. Des Usages Proprement Nobles

 

At the table, wine must be taken as a sacred rite, tempered by bread and light meats.

 

 The first cup opens to friendship;

 the second awakens eloquence;

 the third must yield to prudence.

 

Every excess is to be rejected, for beyond the third cup, wine speaks to the demons of madness.

IV. De l’Éthique Médicale du Vin

 

No wise physician should forbid wine altogether, except in cases of acute fever or serious illness.

 

Let wine be recommended to prudent elders, poets, and valiant young men, as a comfort, stimulus, and courage.

In all things, moderation is the mother of health and temperance the key to long life.

 

Wine is a divine gift: it can elevate a man to the light of heaven or plunge him into slime, depending on whether wisdom or excess reigns in his soul.
