LA VUE

 

La Vue is a publication from Louis L’Enfant in which he examined the quality of service, cuisine, atmosphere, sophistication, and consistency at various locations across Almaris. His thoughts are published for public consumption and to raise awareness to the taverns, bakeries, and restaurants of Almaris. Additionally, the prominent chef offers recipes for his readers to try on their own. At the end of every La Vue, Chef Louis L’Enfant may be pleased enough with a certain establishment to award them one, two, or three stars. However, this is not guaranteed and contingent on the review.

THE RECIPE OF THE YEAR

LA RAPIDE
-

Yong Ping Fusion and A Fast Breakfast

 

Ingredients

  • 1 cup cooked rice
  • ½ pound raw fish
  • 2 eggs
  • 2 pickled or hard-boiled eggs (quail’s eggs preferred)
  • 4 spoons of butter
  • ½ cup milk
  • 1 cup creme
  • ⅓ spoon of an earthy-spice
  • ⅓ spoon of salt
  • 3 pinches of parsley

 

Methods

  1. Debone and descale fish.
  2. Poach fish in milk.
  3. Cut fish into bite-sized chunks.
  4. Whisk eggs together in a bowl.
  5. Run your hands through the rice to avoid lumps.
  6. Melt your butter in a pan over direct flame.
  7. Add the rice to the pan.
  8. Lightly brown the rice and remove from the direct flame.
  9. Add fish to pan, fold with rice.
  10. Add salt, an earthy spice, eggs, and creme.
  11. Serve in a bowl with the pickled eggs halved on top.
  12. Garnish with parsley.
