I think the way the question is set up determines some stuff, especially for the 'him and her or her and him' one. First one I read I preferred, I think.

Yeah. Like with the professor one, I read the first sentence first so the professor was established as a man right away. Obviously it could be anything but the first one you read seems to influence your first impression of the person in the sentence.

 

I tend to use they if I don't know genders or I'm speaking hypothetically, because it's simple and gets the point across. A lot of people don't consider it grammatically correct, though, so if I'm writing professionally or for school I'll use 'he or she', but sparingly. The rest of the time I just pick a pronoun.

If I know the persons name but dunno their gender or what they want me to refer to them as, I just say their name.

 

"X was so funny last night. X pugsied so hard." or "they pugsied so hard."
