I am actually interested in this on a customer level. Perhaps I will get my own little server for me and some friends to mess around on...

I have the technical experience of a brick-shaped object made of brick. There are server hosters out there who do servers for people like me where everything is basically done. How difficult is one of your servers to run once I have rented it? Could you set up the plugins and such that I want for extra cost before I get it?

If anyone knows and could shoot me an answer that'd be great!
