Welcome, welcome. Based on what you're saying, I'd suggest Cerulia or Junmara. Both are very welcoming settlements that will probably align with your character's beliefs. Cerulia can be reached via the coastal soulstone pillar [the one closest on your right when approaching the pillars from spawn]. I'm pretty sure Junmara is nearish to Koyo-Kuni, though I'm not sure how to get there. I'm sure CT would help if you find it if you creq, otherwise one of the lovely players could probably help you out.
