if its a new player i do my best to try and focus RP in on them where/when I can and get them up to speed on necessary commands (since most of the time im teaching them how to even post in RP in the first place) and give hints to avenues of interest or by sneaking in information that might catch their eye to see if they want to stick around and learn more

how do you guys make your emotes feel more lived in? like instead of just saying "Yes." Marise cooed, smiling. How do YOU make them feel like your actually writing instead of roleplaying?

its a hit or miss for me most days on whether or not my RP feels like it hits but most of the above is great advice. there's a youtuber (formerly) called LocalScriptMan who posted some great storytelling/writing video essays I would sometimes watch to get the creative cogs turning. he unfortunately went off the deep end but I strongly recommend some of his older popular videos

First off try to write from your interlocutor's perspective. Describe what they would see, smell, hear coming from your character. You can go a little over the top. It's fine.
Instead of she cooed, smiling, you can describe her actual voice: is it loud and clear or do you need to lean in to hear it? Does it pull you in or push you away?
Each emote should have stage directions for another character to follow.
Give other characters (nonverbal) cues to react to when you are done with your block of emotes: a gentle tap on the shoulder, a sudden uncomfortable stare, a subtler shuffling of feet toward that character. Mirror this with your minecraft body and mention that character by name so they are put in the spotlight.
Also in general I've noticed a lack of physicality in LotC dialogue. Lots of characters idly popping their jaw and fidgeting with their armor like a bunch of awkward teenage boys. You are allowed to bump into people!
