I'd like to think my magic RP is magical rather than science-y. At least that has always been my personal goal.

I think discovering the science behind magic actually makes the entire art 5x more fun, but that's just me. I like being analytical about these types of things, while some might enjoy high fantasy whimsical shite. Besides, developing theories on how magic came about is exactly what I'd imagine a mage would do, so you can't entirely expect for us to just go "Oooh Aahhh how does it work hahahahaahhaa?!?!?!?" and just let it be.
