It's unrealistic that's why, no one in a medieval fantasy setting should be able to build a statue that big without it crumbling down.

It's a beautiful detail drfate, just be content with it. If it can exist in a primarily medieval themed, fantasy book series/TV show, then it can exist on a primarily fantasy themed Minecraft server.

The titan statue in GoT has a complicated story, it was built by the first men of the andals when they first settled upon Bravos in the old times. One should also note that it's made of metal and not just stone, the cast metal is what stops it from crumbling apart.
